Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp turmeric powder
  • ¼ tsp cayenne pepper (adjust to taste)
  • 1 can (14 oz) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 cup dried chickpeas, soaked overnight and drained
  • 1 bunch spinach, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • 1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes. Add garlic, cumin, turmeric, and cayenne pepper; cook for another minute until fragrant.
  • 2. Simmer the Soup: Stir in diced tomatoes, vegetable broth, and drained chickpeas. Bring to a boil, then reduce heat and simmer for 30 minutes, or until chickpeas are tender.
  • 3. Add Spinach: Add chopped spinach to the pot and cook for 5 more minutes, or until wilted. Season with salt and pepper to taste.
  • 4. Serve and Garnish: Ladle harira into bowls and garnish with fresh cilantro. Serve hot with crusty bread for dipping.

Tips

  • For a richer flavor, use homemade vegetable broth.
  • Add other vegetables like carrots, zucchini, or bell peppers to the soup.
  • You can substitute canned chickpeas for dried ones if short on time. Just be sure to rinse and drain them well before adding to the pot.

Enjoy this comforting and flavorful Harira during your Ramadan meals!
